Weeknight Stir Fry Noodles w/Chili Egg

These noodles come together in 15 minutes and they’re glorious. Yes, there is some chopping involved but it’s minimal, I promise. The best part is you can play around with almost every aspect of the recipe to make it work just for you.

Active Time: 15 minutes + 10 minutes prep

Servings: 2-4

Ingredients

Stir Fry

1-inch ginger, peeled and grated (or minced)

2 garlic cloves, grated (or minced)

1 medium onion, roughly chopped 

1 red pepper, roughly chopped

1 medium broccoli head, roughly chopped (use the stem, too!)

400g chow mein noodles 

2 tbs chili crisp, plus more for serving

2-4 eggs (1pp)

1 tbs neutral oil, divided

Sauce

3 tbs oyster sauce

1tbs soy sauce

1 tbs maple syrup

½ tbs sambal

2 tsp sesame oil

1 tbs rice vinegar

Instructions

  1. Bring a large pot of water to a boil. 

  2. In a wok, or large frying pan, heat ½ tbs neutral oil. Add ginger and garlic and cook until fragrant, about 1 min.

  3. Add onion and pepper, stir to coat in oil and let cook for 5-6 minutes or until softened. 

  4. Add broccoli, turn heat to medium-low, cover and let steam for 5-7 minutes, or until the broccoli is bright green. 

  5. While that steams, make your sauce. Combine oyster sauce, soy sauce, maple syrup, sambal, sesame oil and rice vinegar in a small bowl and whisk until evenly incorporated. Taste and adjust.

  6. Remove the cover and add sauce to the pan of vegetables. Stir to evenly coat. Let it simmer on low while you cook the noodles.

  7. Drop the noodles in the booiling water and gently stir. Let cook for 1-2 minutes or follow the instructions on the package. 

  8. While that cooks make your chili egg (see below).

  9. Strain your noodles and add them to the pan with your sauce and veggies. Toss with chopsticks for one minute to evenly coat in sauce. 

  10. Serve with chili egg and more chili crisp.

Chili Egg

  1. Heat 2 tbs chili crisp and 1 tsp neutral oil in a skillet on high heat.

  2. Crack egg onto the skillet and let fry in chili oil.

  3. Remove when the whites are crispy around the edges but the yolk is still runny, about 5-6 minutes.

Playing Around

As mentioned, almost every aspect of this recipe can be subbed. Try a different kind of noodle, add a different protein like chicken or tofu, swap out the broccoli for snap peas. The opportunities are endless! Just have some fun!
