BBQ Hot Wings

I haven’t barbecued enough this summer, so that ends now! And these BBQ hot wings are on the menu! They’re the perfect balance of salty, sweet and spicy, using ginger, soy, cayenne, butter and honey. P.S. They can also be done in the oven ;)

Servings: 2-4

Time: ~ 1 hour

Ingredients

2 pounds of chicken wings, split

1 tbsp garlic powder

1 tbsp salt

2 cayenne peppers 

1 2-inch piece of ginger, peeled 

2 green onions

1 garlic clove

¼ cup soy sauce

1 tbsp fish sauce

1 lime

½ stick butter

1 tbsp honey


Instructions

  1. Lay your wings on a wire rack-lined baking sheet. Using paper towel, pat the wings dry. Season both sides with garlic powder and salt. Place in the fridge and let chill while you make your sauce. 

  2. Roughly chop peppers, ginger and onions. Add to a blender along with garlic, soy sauce, fish sauce and the juice of a lime. Blend until smooth.

  3. Transfer the pepper sauce to a pan and bring to a boil. Reduce to medium and let simmer for 5 minutes until slightly thickened. Add butter and continue simmering for 2-3 minutes, or until the sauce is thick enough to coat the back of a spoon. Add honey and mix until incorporated. Remove from heat and set aside. 

  4. Remove the wings from the fridge and take them outside for grilling! Bring your BBQ to 400F and place the wings on the hottest part of the grill. I like to make sure they’re all close together, in a little cluster, so they stay moist. Cook for 8-10 minutes on each side, or until the skin is golden brown and the internal temperature reaches 165F. You can also do them in the oven! Remove the wings from the fridge and let them come to room temperature. Meanwhile, heat the oven to 400F. When the wings are at room temperature, place them in the oven (wire rack and all!) and cook for 8-10 minutes on each side. Hot tip: remove any excess seasoning from the bottom of the sheet pan and cover the pan in foil before cooking for an easier clean up.

  5. Pour your sauce over the wings and toss until evenly coated. Serve with sesame seeds and sliced green onion. Enjoy!

Playing Around

Don’t fret if you can’t find cayenne peppers at the super market. Any long, red chili pepper will do! Or, for that matter, any pepper will do! Use what you can find. BUT be mindful of the spice level — 2 habaneros are going to be a lot spicier than 2 jalapeños.
