Warm Feta + Sweet Peppers w/ Sausages

There’s nothing better than warm feta — you can quote me on that! In this one pot meal, warm feta gets mixed into jammy sweet peppers and served with browned sausages. Add some fresh buns and call it a backyard sandwich party!

Servings: 4-6

Active Time: ~30 minutes

Ingredients


200g feta

5 sausages (I’m using mild Italian)

2 tbsp olive oil

4 large sweet peppers, sliced (preferably no green ones!)

1 garlic clove

1 tbsp red wine vinegar

1 tsp sugar

red chili flakes

zest of 1 lemon

1 tsp salt  

cracked black pepper

fresh herbs for serving (I’m using mint)

soft buns for sandwiches (optional)

Instructions

  1. In a large pan (with matching lid) cook your sausages, trying to get as much browning as possible. You can also cook them on the barbeque! Remove and set aside. 

  2. Reduce heat to medium and add olive oil. Once the oil is glossy, add sweet peppers and cook until slightly softened. Then, season with salt, sugar and red wine vinegar. Continue cooking until completely soft and slightly browned. If your pan gets dry, add water, a tablespoon at a time, to help the peppers along. 

  3. When the peppers are soft, move them to the sides of the pan, creating a hole in the center. Place the feta in the hole and top with red chili flakes (measure with your heart), lemon zest, black pepper and a drizzle of olive oil. Add the cooked sausages back into the pot and cover. Let cook on medium-low for 5-10 minutes, or until the feta is warmed through and soft. 

  4. Remove the sausages and add to a serving platter. Mix the warm feta into the peppers and add to the platter. Top with fresh herbs and serve with soft buns.
