Ingredients

  • 200g pure, natural honey

  • 3 tbsp dried and crushed red peppers or chopped red Thai chili peppers

  • 1 tbsp apple cider vinegar

  • Optional: jars, tags and honey dippers for gifting (see note)

Directions

  • Add honey to a medium pot and heat on medium-low.

  • Add dried or fresh chilis and stir to combine. Continue heating on medium-low until the honey becomes thin, with a water-like consistency, and is just about to simmer. Remove from heat and let sit for 15 minutes to infuse.

  • After 15 minutes, taste the honey. If it's not spicy enough, let it sit for 10-15 minutes longer.

  • When the honey is spicy enough for your tastebuds, use a fine mesh sieve to strain the honey into a large measuring cup (preferably one with a spout!). The strainer should catch all the seeds and pepper specks, leaving you with glossy, near-clear honey.

  • Add apple cider vinegar to the strained honey and stir to combine.

  • Distribute the honey into jars and let cool before sealing. Store in the fridge for up to 3 months.

Notes

  • This recipe yields roughly 10 x 100mL jars of honey.
