3-Ingredient Hot Honey

minutesIngredients
200g pure, natural honey
3 tbsp dried and crushed red peppers or chopped red Thai chili peppers
1 tbsp apple cider vinegar
Optional: jars, tags and honey dippers for gifting (see note)
Directions
Add honey to a medium pot and heat on medium-low.
Add dried or fresh chilis and stir to combine. Continue heating on medium-low until the honey becomes thin, with a water-like consistency, and is just about to simmer. Remove from heat and let sit for 15 minutes to infuse.
After 15 minutes, taste the honey. If it's not spicy enough, let it sit for 10-15 minutes longer.
When the honey is spicy enough for your tastebuds, use a fine mesh sieve to strain the honey into a large measuring cup (preferably one with a spout!). The strainer should catch all the seeds and pepper specks, leaving you with glossy, near-clear honey.
Add apple cider vinegar to the strained honey and stir to combine.
Distribute the honey into jars and let cool before sealing. Store in the fridge for up to 3 months.
Notes
- This recipe yields roughly 10 x 100mL jars of honey.
