Bang Bang Salmon Bites

Yes, you could order takeout tonight. Or, you could make these 30-minute bang bang salmon bites. I promise you it’s worth the (very minimal) effort. Not to mention a lot cheaper! Salmon gets marinated in soy sauce then pan fried until flaky and tender and served with a finger-licking-good bang bang sauce that’s seriously delicious enough to make a flip flop sound appetizing.

  • chef’s knife

  • medium bowl
  • medium frying pan
  • fish spatula
  • small bowl
  • grater

Bang Bang Salmon Bites

Ingredients

  • 2 5-7oz salmon fillets, skin removed

  • 3 tbsp soy sauce, divided

  • 1 tbsp neutral oil (I'm using avocado oil)

  • 1/4 cup mayonnaise 

  • 1/4 cup sriracha 

  • 1 tbsp rice wine vinegar

  • 1 tbsp lime juice

  • 1/2 tsp sesame oil

  • 1 garlic clove

  • 1-inch piece of ginger

  • 2 tbsp honey

  • salt (I'm using Diamond Crystal Kosher)

  • jasmine or sushi rice for serving, along with your favourite toppings! I like using: avocado, cucumber, hot red peppers, cilantro, green onion and sesame seeds. 

Directions

  • Cut your salmon into bite-sized pieces. Transfer to a medium bowl and cover with 2 tbsp soy sauce. Toss to coat and set aside. If you're serving the salmon with rice, now would be a good time to get that on the stove and start cooking. 

  • While the salmon marinates, make your bang bang sauce by combining 1/4 cup mayonnaise, 1/4 cup sriracha, 1 tbsp rice vinegar, 1 tbsp soy sauce, 1 tbsp lime juice, 2 tbsp honey and 1/2 tsp sesame oil to a small bowl. Whisk until smooth, taste and season with salt, if needed. 

  • Heat a medium frying pan on medium heat. Once warm, add 1 tbsp neutral oil. Working in batches, add your salmon pieces to the hot oil and fry until golden brown on one side. Flip and repeat. When both sides are golden brown, take a peak at the side of salmon pieces; When the salmon turns from dark pink to light pink that indicates doneness. When the pieces are light pink 80% of the way through, remove from heat and set aside to rest. The salmon will finish cooking while it rests. 

  • While the salmon rests, prep your toppings. I like to thinly slice cucumber, avocado, hot red peppers and green onion. And serve with cilantro, sesame seeds and more lime for garnish. 

  • When everything is ready, plate up your bowls and serve with bang bang sauce. Enjoy!
