Tortellini en Brodo

A simple and delicious soup that warms the heart on a cold day, and reminds you that spring is around the corner. That might be cheesy but it’s true. Just try it for yourself 🙂

Tortellini en Brodo

Ingredients

  • 350g tortellini (I'm using cheese-filled, but anything will work!)

  • 1 cup frozen peas

  • 900 mL chicken stock (I'm using my no-fuss chicken stock but if you're using store-bought reach for something with no added sodium)

  • 1/2 cup grated parmesan

  • salt (I'm using Diamond Crystal Kosher)

  • cracked black pepper

Directions

  • Pull 1 cup peas from the freezer and set aside. 

  • In a medium sauce pan add 900mL no sodium, or unseasoned-homemade, stock. I'm using my no-fuss chicken stock. Season with 1 tsp salt and bring to a low boil. Add 350g tortellini and 1 cup peas. Bring back to a low boil and cook for 5 minutes, or until the tortellini are ready. 

  • When the tortellini are cooked, taste a bit of the broth for seasoning. If it tastes dull and muted, add a bit more salt. 

  • Remove from heat and serve topped with lots of grated parmesan and cracked black pepper. 

Notes

  • If you're using pre-seasoned broth, be sure to taste before adding more salt in step #2.
