Ginger-Lime Salad Dressing

This ginger-lime salad dressing is perfectly balanced and very addicting. We’re layering acids with punchy aromatics and rounding it out with a dash of sweetness. Pour it on your favourite salad or use it to marinate chicken at your next barbecue. 

Equipment

  • small bowl or jar
  • zester or grater

Ginger-Lime Salad Dressing

Ingredients

  • 1inch piece ginger, peeled

  • 1 garlic clove, peeled

  • 1 lime

  • 3 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1/4 cup neutral oil 

  • Salt (I'm using Diamond Crystal)

Directions

  • In a small bowl or jar, grate 1inch piece of peeled ginger and 1 peeled garlic clove. 

  • Add in the zest and juice of 1 lime, 3 tbsp apple cider vinegar, 1 tbsp honey, 1/4 cup neutral oil and a generous pinch of salt. Shake vigorously until combined. Taste and adjust seasoning!

  • Serve with roasted cabbage and carrot salad or use it to lightly pickle cabbage for easy weeknight fish tacos
