This ginger-lime salad dressing is perfectly balanced and very addicting. We’re layering acids with punchy aromatics and rounding it out with a dash of sweetness. Pour it on your favourite salad or use it to marinate chicken at your next barbecue.

Ginger-Lime Salad Dressing

1inch piece ginger, peeled
1 garlic clove, peeled
1 lime
3 tbsp apple cider vinegar
1 tbsp honey
1/4 cup neutral oil
Salt (I'm using Diamond Crystal)
Directions
In a small bowl or jar, grate 1inch piece of peeled ginger and 1 peeled garlic clove.
Add in the zest and juice of 1 lime, 3 tbsp apple cider vinegar, 1 tbsp honey, 1/4 cup neutral oil and a generous pinch of salt. Shake vigorously until combined. Taste and adjust seasoning!
Serve with roasted cabbage and carrot salad or use it to lightly pickle cabbage for easy weeknight fish tacos.
