Grilled Zucchini w/ Whipped Feta
When the whipped feta trend was going off online, I knew it would taste mighty fine with grilled zucchini. And honestly, I don’t think another dish has better combined my favourite things about summer (grilling and shareable dips). I guess I’m saying good things come from online trends…sometimes?

Ingredients
4 large zucchini
5 ounces feta
1/2 cup plain Greek yogurt
1 tbs honey
1 tsp fresh or dried thyme (optional)
6 tbs olive oil, divided, plus more for oiling the grill
1 1/2 tsp salt, divided
1 lemon
Instructions
Whipped Feta
To a blender, add feta, yogurt, honey, 1/2 tsp salt and thyme. Pulse until evenly combined. You might have to use a spatula to help the blender along.
Once combined, start blending on medium. While blending, gradually add 3 tbs olive oil in a steady stream. Continue blending until smooth.
Cover and store in the fridge until ready to serve.
Grilled Zucchini
Heat grill to 400F.
Cut zucchini into similarly sized wedges, about 3 inches x 1/2 inch.
In a large bowl, add zucchini, 3 tbs olive oil and 1 tsp salt. Using your hands, toss zucchini until evenly coated.
Oil the grill using a brush or towel. Place zucchini perpendicular to the grate lines. Close the lid and let cook for 5 minutes, or until there are dark grill marks. Flip and repeat until all sides have kissed the grill.
Plate your zucchini on a bed of whipped feta and serve with lemon wedges.
