Heirloom Tomato Salad w/ Fennel + Honey Vinaigrette

I probably eat this salad at least once a week from mid-July to September, when the market is brimming with juicy tomatz. I’ll be honest, the in-season tomatoes do most of the talking but something special happens when they’re paired with my honey and fennel vinaigrette, let me tell you!

Servings: 4-6

Ingredients

Salad

4 large heirloom tomatoes

Basil (optional)

1 tsp salt

Fresh cracked black pepper

Dressing

1 tbs red mine vinegar

1 tbs honey

1/2 tbs crushed or ground fennel seeds

2 tbs good quality extra virgin olive oil

Instructions

  1. Slice tomatoes into thin wedges and fan out onto a flat serving dish.

  2. Sprinkle tomatoes with salt and a few cracks or pepper. Set aside while you make the dressing.

  3. Make the dressing by whisking together vinegar, honey and fennel seeds. Once combined, slowly drizzle in olive oil while you continue whisking. Continue until emulsified.

  4. Spoon dressing over tomatoes and garnish with fresh basil.
