Ginger-Lime Salad Dressing

The perfect punchy and bright addition to any meal

Ingredients
  

  • 1 1-inch piece ginger peeled
  • 1 garlic clove peeled
  • 1 lime
  • 1/4 cup apple cider vinegar
  • 2 tbsp honey
  • 1/3 cup neutral oil
  • salt I'm using Diamond Crystal

Method
 

  1. In a small bowl or jar, grate 1 1-inch piece of peeled ginger and 1 peeled garlic clove.
  2. Add in the zest and juice of 1 lime, 1/4 cup apple cider vinegar, 2 tbsp honey, 1/3 cup neutral oil and a generous pinch of salt. Shake vigorously until combined. Taste and adjust seasoning!
  3. Serve with roasted cabbage and carrot salad or use it to lightly pickle cabbage for easy weeknight fish tacos.
