Method
- In a small bowl or jar, grate 1 1-inch piece of peeled ginger and 1 peeled garlic clove.
- Add in the zest and juice of 1 lime, ¼ cup apple cider vinegar, 2 tablespoon honey, ⅓ cup neutral oil and a generous pinch of salt. Shake vigorously until combined. Taste and adjust seasoning!
- Serve with roasted cabbage and carrot salad or use it to lightly pickle cabbage for easy weeknight fish tacos.
