A little bit of spicy, sweet, tangy, creamy perfection. It’s the dressing you’ve always wanted but didn’t know you needed. P.S. it could totally be used as a sauce, in fact that’s encouraged.

Here’s everything you need to make chipotle-lime dressing at home:
- blender (preferably immersion)
- if you don’t have a blender, you can use a chef’s knife and cutting board

Cooking Tips
- Careful, she’s spicy! The recipe calls for 3 chipotle peppers in adobo sauce, but it does pack a bit of a kick. If you’re sensitive to spice, use 2 peppers. If you’re a baby to spice, use 1 🙂
- Don’t be afraid to add water. This dressing is on the thick side, so if that’s not your vibe add a little bit of water to help loosen it up. Taste and adjust seasoning with every splash of water to make sure it’s still tasting yummy.
- Serve it with… roasted sweet potato and halloumi salad or weeknight steak burritos.
Chipotle-Lime Dressing

3 chipotle peppers in adobo sauce
3 tbsp mayonnaise
juice of 2 large limes (about 3-4 tbsp)
2 tbsp neutral oil, like avocado or canola
1 tbsp honey
Salt (I'm using Diamond Crystal)
Directions
Add 3 chipotle peppers, 3 tbsp mayonnaise, juice of 2 limes, 2 tbsp neutral oil and 1 tbsp honey to a blender and blend until smooth. Taste and adjust seasoning.
Note
- If you don't have a blender, mince the peppers using a cutting board and knife. Add to a bowl with the other ingredients and mix until combined. You might need to add more lime juice or oil to get a smooth consistency.
