Tortellini en Brodo

Ingredients
  

  • 400 g tortellini I'm using cheese-filled, but anything will work!
  • 1 cup frozen peas
  • 6 cups sippable broth I'm using my no-fuss chicken stock (linked in instructions)
  • 1/2 cup grated parmesan
  • salt I'm using Diamond Crystal Kosher
  • cracked black pepper

Method
 

  1. Pull 1 cup peas from the freezer and set aside.
  2. In a medium sauce pan add 6 cups sippable broth, I'm using my no-fuss chicken stock. Season with 1 tsp salt and bring to a gentle boil. Add 400g tortellini and 1 cup peas. Bring back up to a gentle boil and cook like this for 5-10 minutes, or until all the tortellini float tot he top of the broth.
  3. When the tortellini are cooked, taste a bit of the broth for seasoning. If it tastes dull and muted, add a bit more salt and some cracked black pepper. Remove from heat and serve topped with lots of grated parmesan and cracked black pepper.
